We\u2019re here to bring you up to speed.<\/span><\/strong><\/p>\n<h3>The benefits of storing your ingredients properly<\/h3>\n<p>Working with fresh, well-packaged ingredients stored at the right temperature is essential. In doing so,\u00a0first and foremost you reduce the health risks for your consumers, while also limiting food waste. Products which have their natural characteristics preserved give you\u00a0more control over the quality\u00a0of your production and allow you to\u00a0<strong>increase productivity.<\/strong><\/p>\n<h3>Positive cold storage: the golden rules<\/h3>\n<p>Positive cold storage, i.e.\u00a0in a refrigerator at between 0 and 4\u00b0C\u00a0(at the coldest point), allows you to preserve the qualities of your fresh foodstuffs and products\u00a0for a length of time which varies depending the nature and degree of preparation\u00a0(raw material, semi-finished product, finished product). Whatever the product, the following recommendations apply:<\/p>\n<ul style=\"padding-left: 35px;\">\n<li>Take into account the information\u00a0indicated on packaged products:\u00a0use by date,\u00a0best before date, supplier\u2019s storage conditions (temperature, storage).<\/li>\n<li>Do not break the cold chain\u00a0by keeping interruptions to a minimum.<\/li>\n<li>Do not refreeze food that has already been defrosted.<\/li>\n<li>Store\u00a0raw and cooked foods\u00a0separately.<\/li>\n<li>Indicate the date on which your preparations were made on containers.<\/li>\n<li>Check\u00a0the temperature of your refrigerator\u00a0regularly.<\/li>\n<\/ul>\n<h3>Tips for storing&#8230;<\/h3>\n<ul>\n<li><strong>Eggs and dairy products:<\/strong>\u00a0raw egg-based preparations such as chocolate mousse or mayonnaise can be kept for 24 hours. Fresh cream and raw milk can be kept for up to 3 days at a maximum of 6\u00b0C. Butter can be kept for 3 to 6 weeks in the fridge.<\/li>\n<li><strong>Pastry fillings and cream products:<\/strong>\u00a0pastries made with cream or choux pastry such as millefeuilles and \u00e9clairs can be kept for 48 hours at a maximum of 7\u00b0C (at room temperature, pastries made with cr\u00e8me p\u00e2tissi\u00e8re can be kept for 12 hours). Allow 10 days shelf life for pre-prepared fillings such as ganache, frangipane or praline.<\/li>\n<li><strong>Meat and meat-based fillings: <\/strong>raw meat and minced meat will keep for 2 days at 2\u00b0C, while cooked meat preparations can be kept well packaged for up to 3 or 4 days at a maximum of 4\u00b0C.<\/li>\n<li><strong>Fish and shellfish:\u00a0<\/strong>fresh fish and raw seafood can be kept for up to 2 days in the coldest part of the fridge, at between 0 and 2\u00b0C. Cooked fish, shellfish and molluscs can be stored for 3 to 4 days.<\/li>\n<li><strong>Fruit, vegetables and fruit-based fillings:<\/strong> whole fresh vegetables and fruit retain all their qualities in a cool place for 3 to 4 days. For chopped fruit and vegetables, use within 24 hours, checking appearance and colour.
